Ingredients you’ll need:
1 gallon (3.7l) whole milk (ideally NOT ultra pasteurized)

1.5 teaspoons (8g) citric acid
1 cup (250ml) water

1/2 teaspoon (3g) liquid rennet
1/4 cup (60ml) water

1 tablespoon (8g) kosher salt
