Ingredients:

  • 2 tablespoon peanut butter
  • 1 tablespoons lime juice
  • 1 tablespoon soy sauce
  • 8 oz leftover cooked lo mein noodles from BBQ Beef Stir Fry, recipe follows
  • 2 cups leftover stir fry vegetables from BBQ Beef Stir Fry
  • 2 scallions, sliced
  • 1 tablespoons cilantro chopped
  • 1 (1 1/2-pound) beef chuck steak, sliced into thin strips
  • 2 tablespoons canola oil
  • 2 carrots, sliced about 1/4-inch thick
  • 2 stalks celery, sliced about 1/4-inch thick
  • 1/2 medium yellow onion, sliced
  • 8 ounces white button mushrooms, sliced
  • 1 tablespoon freshly minced ginger root
  • 1 tablespoon freshly minced garlic
  • 1 head broccoli, cut into florets
  • 1 (16-ounce) package lo mein noodles, cooked according to package directions
  • 1/4 soy sauce
  • 2 tablespoons tomato paste
  • 1 teaspoon chopped ginger
  • 1 teaspoon chopped garlic
  • 1 teaspoon hot sauce
  • 1/4 cup light brown sugar
  • 2 tablespoons cider vinegar
  • 1/8 teaspoon pepper
