Serves 1

  • 4ounces pork tenderloin
  • 1tablespoon pesto
  • 1 medium zucchini
  • 2teaspoons olive oil
  • 3/4cup cooked whole-wheat couscous
  1. Coat pork with pesto; bake at 375 degrees until internal temperature reaches 160 degrees, 30 to 40 minutes. Slice zucchini and sauté in olive oil until tender and lightly browned. Serve with couscous.
