- 4ounces pork tenderloin
- 1tablespoon pesto
- 1 medium zucchini
- 2teaspoons olive oil
- 3/4cup cooked whole-wheat couscous
Coat pork with pesto; bake at 375 degrees until internal temperature reaches 160 degrees, 30 to 40 minutes. Slice zucchini and sauté in olive oil until tender and lightly browned. Serve with couscous.
