  • 1 tablespoon sugar
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons fennel seeds, toasted
  • Kosher salt
  • 1 4 1/2-foot hog casing, soaked in water 30 minutes and then flushed with water
