  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon whole-grain mustard
  • 1 teaspoon fish sauce (see Cook's Note)
  • 1 teaspoon salt
  • Pinch nutmeg
  • Ground black pepper
  • 4 to 8 slices prosciutto
  • 4 3/4 cups (575 grams) all-purpose flour
  • 1 teaspoon salt
  • 1/2 cup (110 milliliters) whole milk
  • 1/2 cup (110 milliliters) water
  • 1 cup (200 grams) lard
  • 1 egg whisked with 2 tablespoons water, for egg wash
