Ingredients:

  • 1/2 cup flour
  • 1/2 teaspoon kosher salt, divided
  • 1/4 teaspoon freshly ground pepper
  • 2 large eggs, lightly beaten
  • 1 cup panko (Japanese-style bread crumbs)
  • 2 boned, skinned chicken breast halves (1.4 lbs. total), sliced crosswise 1 in. wide, then again to make 1-in.-wide “tenders”
  • 1/4 cup canola or other vegetable oil, divided
  • 3/4 cup sushi rice
  • 2 sheets (each about 7 in. by 8 in.) toasted nori, each cut crosswise into 1-in. strips
  • 1/2 cup ketchup
  • 1 tablespoon soy sauce
  • 1 to 2 tsp. grated fresh ginger
  • 2 small garlic cloves, grated
  • 1 to 1 1/2 cups sugar snap peas, strings removed
