I always have a hard time deciding what to order at my favorite restaurants. Should I try something new, or get a dish I know I love? This tasty wrap is based on something I’ve ordered lots of times—a tasty, cold peach-chicken salad. Why? Because it’s always delicious.

flour tortilla

Mayonnaise (optional)

or 3 big lettuce leaves

chopped cooked chicken
Peach Salsa:

c.
diced peaches (If fresh peaches aren’t in season, use frozen ones. 11⁄2 cups of frozen peaches becomes 1 cup when thawed and diced.)

diced purple onion

minced chili pepper (optional)

tsp.
salt

white vinegar

tsp.
garlic powder
- To make the salsa: Use a wooden spoon to stir all of the ingredients together in a mixing bowl. You can store extra salsa in the refrigerator for three days.
- Spread mayo on the tortilla, making sure you go all the way to the edge. Then arrange the lettuce on the tortilla, leaving a strip of mayonnaised tortilla showing at the edges. (This will help it stick together when you roll it up.) Next, pile on the chicken and Peach Salsa.
- Roll ‘er up and take a bite.
