After discovering this recipe a few years ago, I always bake my potatoes this way. Great on the inside. I usually cook other veggies for the side/as a filling and I leave out any salt as there will obviously be plenty.

This was great, however, for my taste, it needed less salt. Definitely will make again and mix in some other dry spices to make it more interesting.

I have been trying to figure out a healthy way to get the salt to stick. In the past, I used bacon grease. I feel much better with this method. It makes a terrific baked potato.
