3 Lebanese cucumbers
3 spring onions, thinly sliced
2 tbsp chopped dill
1/2 cup Coles lite sour cream
1 garlic clove, crushed
2 tbsp fresh lemon juice
24-30 australian raw king prawns, peeled and deveined, tails intact
2 tbsp Coles pure olive oil
Dill sprigs, to garnish

Halve cucumbers (3 Lebanese cucumbers) lengthways and scoop out seeds. Slice very finely. Place in a bowl and sprinkle with salt. Stand in the fridge for 1 hr. Drain cucumber and squeeze out the liquid, then pat dry with paper towels.
Combine cucumber in a large bowl with onions (3 spring onions, thinly sliced) and dill (2 tbsp chopped dill). Mix sour cream (1/2 cup Coles lite sour cream), garlic (1 garlic clove, crushed) and lemon juice (2 tbsp fresh lemon juice) together, and fold through the salad.
Heat barbecue grill plate, or a chargrill, to medium-high heat. Drizzle prawns (24-30 australian raw king prawns, peeled and deveined, tails intact) with olive oil (2 tbsp Coles pure olive oil), and cook for about 2 mins each side, or until golden brown and cooked through.
Arrange a small pile of cucumber salad on serving plates. Top with a few sprigs of dill (Dill sprigs, to garnish) and prawns.
