- Follow package directions to cook the pasta.
- In the meantime mince the scallion; peel and finely dice the avocado and thinly dice the tomato. Put them all in a bowl. Add the lemon juice and a pinch of salt and mix well.
- Once the pasta is done drain it and season with the “guacamole”. You can enjoy it hot or let it chill for a few hours in the fridge. It’s always delicious!
