- In a food processor, combine the ricotta cheese, cream cheese, sugar, cocoa, egg yolk and vanilla until smooth; transfer to a bowl.
- Beat egg whites in a bowl until soft peaks form. Gradually add sugar and beat until stiff peaks form. Fold the egg whites into the ricotta mixture.
- Combine the coffee and the liqueur in a small bowl.
- Arrange half of the cookies in the bottom of a 9-inch square baking dish that you’ve sprayed with nonstick spray. Sprinkle with half of the coffee mixture. Spread half of the ricotta mixture on top. Repeat one more layer. Cover and chill overnight.
